THE CROWN PARADISE GOLDEN IS NOT LOOKING SO SHINY ANYMORE

It’s Spring break and once again, my family set out for Puerto Vallarta, Mexico, and our favorite resort, The Crown Paradise Golden. This time around, we stayed for two weeks and our experience was different in comparison to the prior years. Some of the changes were good, and some were not.

We arrived at the resort on a beautiful sunny day and we were able to check in immediately. This year we went through RCI, which we have in the past as well. Previously we were put in a larger room than other vacationers receive, but it was also more rundown. This year, we were in for a surprise.

Martin, the Crown Paradise Club Host, said he had a special room for us. We were led through winding halls until we reached an elevator. We promptly boarded and rode to the sixth floor and then walked up another flight of stairs (because the elevator we could have ridden to our floor had not worked in a few months). He then opened the door to a suite I had no clue existed.

Inside were two rooms, one with a king-size bed, another with two full-size. Two bathrooms, a sitting room with a television, couch, leather chairs, kitchen table, microwave, and full-size fridge. Out on the patio were three chaise loungers, a table with chairs, and a pool! We had our own pool! It was small, but still, it was ours for two weeks. My mind was blown. At first, I thought it was a mistake, but then I realized that this must be an upgrade they give to their RCI members.

My family greatly enjoyed the room we stayed in. We spent a lot of time around our small pool relaxing in our chaise loungers and dipping into the pool as the day heated up. We also spent a good amount of time playing games, such as Cribbage, Farkle, and Sevens, at our outdoor and indoor tables. The rooms were quite comfortable and the only two complaints I have about the rooms are that our pool was losing water and needed to have water added twice during our stay and that the water in the showers was quite touchy and had a tendency to be too hot if you didn’t turn them on in the right sequence.

Outside of our room was where the issues became most prominent. This being our third visit to the resort over a five-year timeframe, it has become apparent that the owners are not maintaining the grounds and structures like they should be. The main pool on the Crown Paradise Golden side has broken grates around it, which I believe were broken during our first visit five years prior. The pool was very cloudy, and the hot tubs were worse. I didn’t set foot in the hot tubs this year because of how nasty they looked. There are tiles in the pool that need patching or replacing. The bridge that goes from the front of the bar across the front of the hot tub looks disgusting. It’s rusted and nasty and it’s a hazard. I see people slip on that thing every single year. They should take it out.

When you look at the photos on the website, the balconies all look perfect, but in reality, the paint is flaking off, and in large chunks in some places. Even the Sky Bar 7 pool deck doesn’t look as nice as it does in the photos, and it’s only a couple of years old.

I have always enjoyed the food at Crown Paradise Golden, but this year was different. The food at the restaurants was great, though they are short-staffed in some areas. The Mediterranean restaurant took up the most time (over two hours) because there were not enough staff to serve the patrons.

Outside of the restaurants, the buffet left something to be desired. The food was freshest in the morning at breakfast, but even then, several items were cold when they should have been hot. The poolside café served a seafood cocktail one day each week for a timeframe of two hours and it did not appear to be kept cold. I became quite ill twenty-four hours after consuming it. On that same note, in past years, no one in our group experienced gut issues. This year I experienced them twice, as did both of my parents. I came home with a parasite (I’m not saying it came from the resort, but considering the other issues, you do the math).

Another situation we ran into was a pungent smell on the first floor near the rooms by the tennis court. We met a couple who said they were in those rooms and had to leave the patio door open at night because the smell was so strong. I can only describe it as the sweet stench of a dead animal. It smelled that way for a week. I feel sad for the people who got stuck in those rooms. I couldn’t handle the stench as I walked by each day to go to breakfast.

Outside of the above items, there are several other areas where the grounds could use further maintenance. They could clean the chairs in the buffet so that there weren’t bird droppings on them. One morning we asked a server to clean a chair, and he looked at it and walked away. To be fair, he was one of the head guys, but seriously? Who wants to sit on a chair covered in bird poop? We flagged down one of the younger servers, who immediately took care of it.

On an upward note, the resort added some new entertainment. They now have bands come and play poolside for two hours on Wednesdays and Saturdays. The music was splendid. One particular band is called Three Circus. I could have listened to them all night long, as they were that good. They covered AC/DC, ZZ Top, and many other rock bands. The band also plays up the street at Monkey Business at frequent intervals.

I was happy that they still have their weekly foam party, but not happy to see that they added balloons to it. While balloon animals are fun, the balloons are going straight into the garbage after the party. It’s an unnecessary hazard to the environment.

If you’re new to the Crown Paradise Golden, and you drink enough, you may not notice the issues I listed above. You may be okay with the chipped paint on the building and the broken pool grates. You may not even notice the stench of a dead animal. That’s okay. If you’re happy, that’s all that matters.

I for one, when I’m paying $1.5k for a vacation, expect things to be in working order. I don’t care if you are an adult-only resort. This girl is going to take a break from the Crown Paradise Golden. Hopefully, with any luck, they’ll get their act together before our next visit.

CDT PRESENTS: THE PROM

March is here, and nearly gone, which means, Spring is around the corner. For me, two things usher in Spring. A trip to someplace warm for two weeks, and an evening at the Chanhassen Dinner Theatres as an early gift for my stepdaughter’s birthday. The theatre is the first stop, and it gives me a feeling of warmth that equals that of a sunny day on the beach.

This year, Chanhassen is producing The Prom, which is a story about equal rights for LGBTQ+ teens who want to attend the iconic school function. For most teens, it is a matter of buying their ticket and showing up, but for one teen, it becomes an all-out war. For another, the decision of whether to show the world her true self weighs heavily.

Joined by some waning theatre stars from another state, Emma Nolan finds unwanted support in achieving a goal she isn’t sure she has the strength to stand up for. With a little encouragement from her new theatrical pals, she finds her voice and manages to break down the walls that stand before her and change the future of prom for all LGBTQ+ teens, forever.

The show is full of comedy and heart and has a talented cast with excellent voices. I attended on March 8th, which was the debut performance of Lussi Pearl as Emma Nolan. Normally, the part is played by Monty Hays, who could not be present that evening. While I cannot attest to the excellence of Monty Hays as Emma, I can say that Lussi Pearl shined. I was especially excited to hear that her father made the trip in and could see her performance. He must be one proud papa!

Outside of the performance, I would like to point out that the theatre offered envelopes for donations to send LGBTQ+ teens to a camp made for inclusion and to meet other LGBTQ+ teens. This is a wonderful opportunity to show support. I happily donated and would encourage anyone else who is attending the show to do so as well. Every child should be able to grow and explore who they are in a safe setting, and that’s what this camp provides.

Savory Breakfast PopOvers

Today I am bringing you a food option that is a little different. AIP/Paleo Popovers. I have made this recipe twice, but in all honesty, the little buggers have never popped. Despite the lack of popping, if you are looking for something great to eat for breakfast or brunch, these might be your ticket to a hearty and satisfying nosh.

The recipe is from a YouTube video, and it is fairly simple. I have made them two different ways. The first time I made them I added left over chopped ham, onion, and garlic. Today I used bacon, Portobello mushrooms, and onion. It really doesn’t matter, whatever sounds good to you. This recipe should be simple and savory.

In the video they use lard to grease the tins. I used bacon grease, because that is what I had available. Honestly, I cannot imagine using anything else. The bacon grease mixes in and creates this wonderful smoky flavor that I simply cannot get enough of. The end result is crispy on the outside and a little gooey on the inside. They are so good, you might be tempted to eat them all in a single serving. To stop myself, I add some fruit on the side, because they will make for a great breakfast the following day.

Foodie Friday: Slow Cooker Beef Bourguignon

So, not going to lie, this recipe became a must for me, the second I saw it. First off, I love the movie Julie and Julia. It’s amazing what Julia Childs was able to do for women in the world of cooking. She knocked down the walls preventing women from learning to become extraordinary chefs. If you love to cook and have not seen Julie and Julia, I recommend you make this recipe, uncork a nice bottle of wine, and settle in for a dinner showing. I am guessing Julia Childs might not approve of her Beef Bourguignon being made in a slow cooker, but I am pretty freakin’ stoked about it, due to the time-saving aspect.

Moving on, this recipe was taken from the unboundwellness.com site. As I stated in last Friday’s article, I have a few recipes I plan to make and evaluate, which come from this same site. The Slow Cooker Beef Bourguignon is a savory stew filled with lots of veggies, and of course, stew meat.

It took me an hour to put the dish together. The ingredients are as follows: beef stew meat, bacon, carrots, Portobello mushrooms, white sweet potatoes (I used orange), pearl onions, beef broth, arrowroot powder, red wine, salt, pepper (I omitted this), garlic, Bay leaf, and Thyme. This dish can be prepared to fit the needs of anyone on the AIP, Paleo, Whole30, or Gluten free diet.

The most difficult part of this dish is cooking the bacon and browning the beef. The rest is really about chopping vegetables and putting the ingredients into the crockpot at the correct time. It must cook for 8 hours on low, so definitely plan ahead.

I ran into a couple of snags during my cooking adventure. I was unable to find white sweet potatoes, so I used orange, which the recipe says is okay. I put one in the pot, and will cook two to mash up underneath the stew, once it is ready to serve. The second issue I ran into, was that I forgot to buy fresh Thyme and Parsley, so I had to go back to the store again to get these items. I was not going to let my dish go without Thyme. I took the “Thyme” to make it, so it should be done correctly, right?

It smells and looks heavenly in the slow cooker. Waiting is my biggest frustration. The flavor, however, was totally worth it in the end. It’s hearty and I am incredibly glad this makes enough for six servings, because I want more later.

I give this recipe 5 stars because it seems like a complicated recipe, but with the slow cooker, it becomes quite simple and still provides an elegant dish to share with your family and friends. The recipe was easy to follow and worth the time and wait. The author gives you substitution guidelines as well as different serving options, which is always a nice bonus.

Foodie Friday: Chicken Stroganoff

Welcome to the very first Foodie Friday blog entry where I will review and tell you about my experiences with trying new recipes that I have found. These recipes could range from appetizers to entrees to desserts and most often will be made for those who have diet restrictions. This first recipe I was hesitant about, but I am obscenely happy that I decided to move forward with preparation.

Growing up, my mom liked to make Beef Stroganoff, which was okay (it had nothing to do with how she made it. I would not have been a big fan no matter who made it). I never felt drawn in enough to want to make it myself, until now. The biggest change is that this recipe was made with chicken instead of beef, and I put it on top of mashed sweet potatoes. I am currently kicking off a new diet due to health issues. I have to cut out corn, dairy, grain, soy, and eggs, which can be challenging.

This first recipe came from unboundwellness.com and is Paleo, Whole30, gluten free, and AIP appropriate. I will include a link to the recipe at the bottom of this article. What drew me in was hugely the image posted of the dish. I love mushrooms and they looked wonderfully decadent (I did not include a photo because I failed to take a photo when it was still in the pan and the plated version is not as pretty as what is posted on the authors website).

Now, I should tell you that I did not use the Portobello mushrooms that were listed in the recipe. I ended up swapping for white buttons because the store happened to be out of Portobello and I was not willing to make another stop. I also made the recipe a little larger than what was called for because it turns out, I sliced up more than a pound of chicken.

The recipe calls for chicken breast, chicken broth, coconut cream, arrowroot starch, mushrooms, onion, garlic, coconut aminos, apple cider vinegar, salt, and black pepper (I omitted the black pepper). This dish can be made in a single pan and it cooks up nicely. The smell is divine and it tastes even better. They do say that it will take 20 minutes to prepare, but honestly, it took me an hour to chop everything and cook it, but again, I made extra chicken and added extra ingredients because of my oversight.

I put the stroganoff atop mashed sweet potatoes and it was AMAZING! I think I could eat this recipe every other day and be quite happy. The dish was aromatic and tasted like something you would get at an upscale restaurant, but I made it at home and it was fairly easy. If you like Stroganoff, certainly you should check this recipe out. It’s not like some of those healthy recipes where you take the first bite and instantly wonder what’s wrong with the chef’s tastebuds. This one will wow anyone you invite to dinner (providing they are into this sort of cuisine).

What I love about this site and recipe is that they do make it fairly easy to follow. They also tell you some tips and tricks for changing the recipe to suit your needs. I have several other recipes I intend to try out from this site in the future. They have provided me with enough healthy variation, that I could cook from them for weeks and not get bored.

On a scale from one to five, one being the worst and five being the best, I give Chicken Stroganoff five stars for ease of execution and how sinfully elegant it tastes.
